[edit] Sesame Chili Chicken

Ingredients Instructions
  • 2 Tbsp soy sauce
  • 1-2 Tbsp chili sauce with garlic
  • 1 Tbsp dark sesame oil
  • 4 6-oz skinless, boneless chicken breast halves
  • 1/4 tsp salt
mix up the soy sauce, chili-garlic sauce, sesame oil in a zip-lock bag. add chicken to the bag; seal and marinate for at 1 hour in the fridge, turning the bag occasionally. Side note: I like to poke the chicken a few times with a fork on both sides to get the marinade more in the meat.

Remove chicken from marinade and discard the marinade. sprinkle chicken with salt and grill. It should take about 6 minutes but you know your grill the best and if you have it hotter or cooler or slack and use a foreman, ymmv. let stand 5 minutes before cutting the chicken diagonally across the grain into thin slices. serve each breast half with 1/2 cup watermelon salsa and if desired, garnish with cilantro springs and/or lime wedges.
